Varieties: Bonbon, and Burgess strain.

Buttercup squash was developed  in the 1920's by the North Dakota Agricultural Experimental Station. It has a characteristic blocky shape with a small “turban” at the blossom end.

Culinary: One of the all time favourite squashes, Buttercup has brilliant orange flesh, similar in taste and texture to a sweet potato -sweet, dry, and smooth. Slice in half, place cut-side down on a cookie sheet and bake at 400ºF approx 60 minutes (test with a knife).
