Thin strips of zucchini make a
delightful summer salad. Ready in 2 minutes!

- Ingredients
4 zucchini (green and/or yellow)
1 lemon
olive oil
red chiles
fresh basil leaves
salt
- Method
With a potato peeler, slice the zucchini
lengthwise into long thin ribbons. Mix 2 parts
olive oil to 1 part lemon juice and a pinch of
salt to dress the salad. Top with chopped basil
and chiles to taste.
