Zucchini Ribbon Salad

Thin strips of zucchini make a delightful summer salad. Ready in 2 minutes!

  • Ingredients

    4 zucchini (green and/or yellow)
    1 lemon
    olive oil
    red chiles
    fresh basil leaves
    salt

  • Method
    With a potato peeler, slice the zucchini lengthwise into long thin ribbons. Mix 2 parts olive oil to 1 part lemon juice and a pinch of salt to dress the salad. Top with chopped basil and chiles to taste.

    Zucchini -both green and yellow (late June - mid October)
    Red chiles (late August - mid October)
    Fresh basil (May - October)
